Shredded coconut and fresh blueberries boost the flavour, colour and nutritional value of your breakfast cereal.
I recently wrote a piece for HIJACKED discussing the nutritional qualities of muesli-based cereals and why they make such a great food throughout the day. It got me thinking about breakfast. Though it is the most important meal of the day, there’s never enough time to sit down and prepare something healthy during the week. So I have the solution. Whip up a batch of this delicious muesli and store it in an airtight container in your pantry. Then whenever the hunger calls in the morning simply pour it into a bowl, add some fruit and milk and you’ve got the perfect pick me up. Blueberries are rich in cancer-preventing antioxidants, while the raw nuts will keep you full. Though high in saturated fat, the coconut is high in fibre, but of course this is a special treat.
Prep Time 5 mins | Makes 800g muesli
- 250g rolled oats
- 250g cornflakes
- 250g mixed raw fruit and nuts
- 50g shredded coconut
- Blueberries, to serve
- Yoghurt, to serve
- Milk, to serve
Make the muesli. In a 2L glass jar or cereal container add the oats, cornflakes, fruit and nuts and coconut. Seal with the lid and shake to combine the ingredients.
Serve the muesli. Pour about ¼ cup into a bowl, scatter with bluberries, add a dollop of yoghurt and a splash of milk and enjoy.
