Ten Meals for Under Ten Dollars: Baked Mushrooms with Green Peas


Cooking Time 15-20 minutes | Serves 4

A super simple veggie-full meal that’s full of flavours. I love the rich, earthy flavour of field mushrooms. Portobello mushies work great too! Pre-heat oven to 180ºC. Line a baking tray with baking paper. Brush the tops and stems of 4 large field mushrooms with paper towel to remove any dirt. Chop 4 slices of stale bread into 5mm cubes using a sharp knife. Combine with 100g grated cheddar cheese, 100g diced bacon and 2 tbsp thyme leaves in a medium bowl. Place the mushrooms, stem up, on the baking tray. Stuff the mixture into the mushroom cavities. Bake in pre-heated oven for 15-20 minutes until golden brown. Cook 400g frozen peas according to the directions on the packet and serve with the mushrooms.

    1. Thanks for the kind words. Try them, you may be surprised. If not, you could do the same thing with capsicums, tomatoes or zucchini. The cooking times will vary though.
