Ten Meals for Under Ten Dollars: Baked Eggs with Chorizo and Zucchini

Eggs_BrendonTheSmilingChef_1 Prep Time 5 mins | Cooking Time 25 mins | Serves 2-4  Eggs_BrendonTheSmilingChef_3 Who says eggs are only for breakfast? Baked with this fiery chorizo and zucchini sauce, they make a hearty meal for any time of day. Pre-heat an oven to 180ºC. Place 150g diced chorizo sausage in an ovenproof frying pan and fry over a medium heat until crispy. Add 200g diced zucchini and 375g arrabiata pasta sauce and stir to combine. Make four wells in the frying pan for the eggs. Crack the eggs and fill in the holes. Bake for 15-20 minutes or until the eggs are cooked to your liking.
