Spring is the best season to enjoy the freshest ‘green’ veg. Here’s a healthy and tasty salad that is a good enough meal on its own, or can be served with beef, lamb or chicken. Cook 200g frozen peas and 200g green beans in boiling, salted water for 2 minutes or until bright green. Drain and combine with drained 425g can cannellini beans, 2 tbsp olive oil, the juice of ½ lemon and 4 tbsp chopped parsley.
