Ten Meals for Under Ten Dollars: Spring Beans and Greens Salad

Prep Time 10 mins | Cooking Time 5 minutes | Serves 2-4

Spring is the best season to enjoy the freshest ‘green’ veg. Here’s a healthy and tasty salad that is a good enough meal on its own, or can be served with beef, lamb or chicken. Cook 200g frozen peas and 200g green beans in boiling, salted water for 2 minutes or until bright green. Drain and combine with drained 425g can cannellini beans, 2 tbsp olive oil, the juice of ½ lemon and 4 tbsp chopped parsley.

    1. Great idea. You could pretty much use any creamy or firm textured cheese in this recipe. Good luck 🙂

This means pan-fried tofu will equally go well with the salad 🙂

        1. Definitely try it out! I think it would be delicious. You could even alter the dressing to a soy, ginger and garlic version if you like 🙂 Feel free to add a little chilli and honey

Hey, I’ll take your idea of adding chilli and honey. The way of dressing is equally tempting…
