One of my favourite things to do with leftovers is to use them as pizza toppings the following day. Most supermarkets stock good-quality, ready-to-use pizza bases. All you have to do is pick up some tomato sauce and a few fresh ingredients to jazz things up and you’re sorted. I made this some nights ago with some leftover bean salad. Why not whip it up for your friends and family tonight. I try to use organic products wherever possible. Thankfully the big supermarket chains have jumped on the environmentally friendly bandwagon and stock a wide range of organic products.
2 fresh pizza bases
Jar of good-quality pasta sauce
1 cup of leftover bean salad (or use one can of mixed beans)
200g baby spinach
1/2 cup grated mozzarella cheese
Preheat and oven to 200ºC. Line two square baking trays, or pizza trays, with baking paper. Place a pizza base on each tray.
Top the pizza. Spread 1/4 cup of pasta sauce over the base of each pizza. Divide the the beans, spinach and cheese amongst both pizza.
Cook for 10 to 15 minutes until the crust is golden and the cheese is melted.
Slice up and serve.
